The Tartar Sauce Conundrum

February 22, 2013 by alhebert Leave a Comment

It’s Lent.

This is the time here in South Louisiana one’s thoughts turn to tartar sauce on Friday. Seafood specials abound. Fish is begin fried. Shrimp is being turned into cocktails. Crawfish are boiling. I like tartar sauce  on most seafood.

Tartar sauce is the fruitcake of the Lenten Season.

Half the members of my family do not use tartar sauce.

So rather than purchase a jar, I decided to make my own. I searched for recipes. I even found a sauce savant.

Shock! There is no tartar or cream of tartar or anything resembling tartar in tartar sauce.  I’m tar-tured by this. With or without cream of tartar, I’ll make this sauce.

It’s basically mayo, lemon juice, sweet pickle relish and perhaps, some mustard. If I’m bold enough, I’ll add chopped onion.

If you have a tartar sauce recipe, please share it.
